(Makes 200 ml bottle)
60 g (handful) of fresh raspberries
100 ml good quality olive oil
35 ml white whine vinegar
30 g caster sugar
30 ml water
I love this fresh raspberry dressing, goes so well with summer salads and it is quick and easy to make. Put all the ingredients in the jug and blitz it with the hand blender. Store it in the fridge and use it within couple of weeks
For a truly summer salad, mix lettuce with crumbled goats cheese, asparagus spears, few pine nuts and drizzle with this zingy raspberry dressing. Yum!
